There is, in every good kitchen, a kind of quiet theatre.
For Amelia, it began on a stool, just high enough to see the bench, where her Nonna Nancy and Nanny Francine moved with instinct and ease. She learnt not from instruction, but from watching. Hands shaping arancini, the careful making of duck pâté, the small rituals that turn ingredients into something lasting. These were her first lessons, and perhaps the most important.
Years later, in Beijing, her life took a turn that felt, in hindsight, inevitable. Working in fashion, she was offered the chance to manage an intimate Italian restaurant. It was there, among the cadence of service and the quiet satisfaction of a well-fed table, that the truth settled in. Food was not simply a pleasure, but a calling. To cook, and to cook for others, was the work she wished to do.
Returning to Melbourne, Amelia found her footing alongside some of the city’s most respected caterers, learning with patience and care. Word travels quickly when something is done well. One table led to another, then another still, until what began as a handful of requests became something more defined. And so, quite naturally, La Francinette came into being.
Today, her approach remains guided by those early instincts. Ingredients are sourced close to home, menus shaped by the rhythm of the seasons, each dish considered not only for how it tastes, but how it gathers people together.
From small, elegant cocktail gatherings to long tables set for a generous feast, the intention is always the same. To offer food that feels thoughtful, abundant, and quietly memorable. A canapé passed at just the right moment. A platter placed in the centre of the table, inviting conversation.
Of course, no table comes to life on its own. There is a certain choreography behind the scenes, a team moving with purpose and polish, ensuring that everything arrives as it should. Glasses are kept full without asking, plates offered with ease, the details attended to with a light but knowing hand. It is service that feels considered rather than conspicuous, and all the more generous for it.

At its heart, La Francinette is about something rather simple.
To create moments worth remembering, through food, care, and a certain sense of occasion.
